Seven vegetables for lunch

Recently I had dinner at La Plaza, an interesting Santa Fe restaurant and bakery. Blue-corn enchiladas and caramel apple pie!

A couple of days later, I had lunch at another restaurant in the city–Saveur Bistro. Salmon and fresh fruit and lots of vegetables—asparagus, beets, eggplant with cheese, grilled red pepper and zucchini, acorn squash with pecans, green beans. And, all of the vegetables were served cold–and they were tasty.

Who said vegetables can’t be delicious?
